Description ‘Elephant Head’ amaranth (Amaranthus) produces stout, upright stems that generally reach 4 to 5 feet tall. They’re topped with large, dense, deep red bloom clusters that first appear in midsummer and fill out as the season progresses, usually with a taller, cylindrical center projection surrounded by shorter ones. It’s not unusual for the plant to lean a bit as the clusters develop, so the tip of the head may curve upward and resemble an elephant’s head complete with a long trunk. Or, it may look like something else, according to your imagination. A single plant makes an interesting accent in a large container; a grouping in the garden makes a traffic-stopping statement.
