Description I generally don’t get excited about edible peas, but I really enjoy growing this one in my garden because it supplies a useful harvest while also being very pretty. This sugar snap pea produces pretty deep purple, edible pods containing green peas when mature. Best picked while they’re still flat (they get tough when they start to swell), the pods are tasty added to fresh salads, used in a stir-fry, or lightly steamed. The plants themselves are quite ornamental, too. The vines usually reach about 6 feet tall, with pretty purple flowers and the purple pods. (You may find the occasional plant with greenish pods too, but I always remove those if I get any, and my plants have been good about producing only the purple pods for a couple years now.) ‘Sugar Magnolia’ produces a super-abundance of tendrils too, giving the whole plant an interesting wispy look.
